The basic ingredients of the baking mix are rice flour and oat flour, with added bamboo fibre for extra fibre content. For extra protein, it contains hydrolysed protein and its delightfully sweet flavour comes from the added erythritol, which results in a product that is not only lactose and gluten-free, but also has no added sugar3.
